Shrimp and Grits

Ingredients
- 12 - 14 medium shrimp, cleaned and deveined
- Olive oil
- Cajun seasoning
- 1 1/2 c. water
- 1/2 c. old fashioned grits
- 2 tbsp. butter, divided
- 1/3 c. heavy cream
- 1 c. shredded cheddar cheese
- green onion, chopped
- bacon bits
- salt and pepper, to taste
Instructions
- Drizzle olive oil on clean, raw shrimp, generously coat with Cajun seasoning, and cook in the air fryer at 380 degrees F for 6 minutes.
- Boil water with 1 tbsp. butter and a pinch of salt. Add in the grits and stir on low heat for 8 minutes, adding water a tbsp. at a time as needed, while stirring continually.
- Add in the rest of the butter and cook for another 4 minutes, then add in the heavy cream for 2 more minutes.
- Add salt, pepper and Cajun seasoning to taste.
- Fold in the cheese and plate with the cooked shrimp, green onion and bacon bits.
- *Don't have an air fryer? No worries, pre-heat oven to 375 degrees F, place shrimp in a 9" x 13" dish. Bake for 9 - 13 minutes.
