Ring Around The Berries

Ingredients
- 2 envelopes unflavored gelatin
- 1/2 cup cold water
- 16 ounces cream cheese (softened)
- 1 cup sugar
- 1 tsp almond extract
- 1/4 tsp salt
- 2 cups milk
- 1 cup heavy cream (whipped)
- fresh sweetened berries (strawberries, raspberries, blackberries)
- powdered sugar
Instructions
- In a small pan combine the gelatin and the water. Stir over low heat until dissolved.
- In a mixing bowl, combine the cream cheese, sugar, almond extract, and salt together. With a hand-held mixer blend until smooth. Gradually add the milk and the gelatin. Chill until slightly thickened. About 15 minutes.
- Gently fold in whipped cream.
- Pour the mixture into a 10-inch spring form pan and chill until firm, about 4 hours.
- Unmold on a plate. Place strawberries, raspberries and blueberries in the center of the cake. Dust with powdered sugar.
