Chile Con Queso
Ingredients
- 3/4 c. whole milk
- 1 lb. American yellow cheese, cubed
- 1 lb. sharp cheddar cheese, cubed
- 2 lbs. Monterrey Jack cheese, cubed
- 1 can chopped green chiles (7 oz.), drained
- 1 can diced tomatoes (14.5 oz.), drained
- 1 can jalapenos (7 oz.), drained, chopped (and use to adjust heat level to the desired point)
- 1 tbsp. jerk seasoning
Instructions
- Pour milk into a nonstick pot and heat over medium heat until hot.
- Add cheeses, stirring as you go. Heat until mixture is thick.
- Add chopped chiles, jalapenos and diced tomatoes. Stir well.
- Add jerk seasoning. Stir well.
- Heat to serving temperature and serve with corn chips.
- Reheat in microwave as needed.
